Here's a recipe I made Thursday night. I will admit I did not have Natural Peanut Butter, so this came out a tad rich. Next time I will be sure to make it with the natural stuff as I'm sure it will make it that much more AWESOME! To be honest, I enjoyed it much better cold (the next day),
1 tablespoon vegetable oil
1/2 onion, chopped
2 garlic cloves, chopped
1/4 cup natural peanut butter
2 tablespoons Bragg's Liquid (or tamari/soy sauce)
1/4 cup vegetable broth or water
1/2 teaspoon paprika
1/4 teaspoon cumin
1/4 teaspoon ginger
Dash of Tabasco
1 bunch kale, chopped
rice/pasta/couscous, ANYTHING really
1. In a large pan, heat vegetable oil. Fry garlic and onions, until translucent.
2. Meanwhile, in a separate bowl, mix peanut butter,
Bragg's, broth/water, and spices until the peanut butter has dissolved, and it has turned saucy.
3. Add kale to the pan, and cook until the leaves are dark green and wilted.
4. Add the peanut butter sauce to the pan. If it is too dry, add broth/water to reach desired consistency.
5. Pour over top your rice/pasta/coucous and ENJOY
